Whatever you do, don't try to watch the one piece anime now. I personally think it gets good once they actually enter the grand line and they get to whiskey peak or drum kingdom, basically the alabasta saga is when it gets good. I very very much liked it during the baratie arc but i fell madly inlove during alabasta.

One piece starts to get good in the baratie arc in episode 24 or chapter 51 when zoro fights mihawk. That chapter shows a glimpse of the greatness of one piece. But arlong park arc should be the first arc that truly shows what one piece is about.
The dynamics between strawhats, emotional moments, hype moments, villains, etc in the arlong park. As addressed above, one piece has an issue with pacing. A lot of the time, this just means that there's a lot of padding and filler keeping the story from truly progressing.
